Having a health snack on hand can be the difference between sticking to your health goals and not. Not to mention if your house is anything like mine, then theres always a hungry mouth asking for food. These Cashew & Date Logs are a sweet hit that can curb those afternoon cravings and keep you on the whole food track.
14 Medjool dates (pittted)
2 Tbsp Coconut oil
2 Tbsp Almond butter
1 tsp Vanilla extract
1/2 cup Cashews (raw)
Pinch of salt
Unsweetened desiccated coconut for rolling
Place all the ingredients into the TM bowl (or food processor) and process for 10 seconds on speed 5, MC on. Scrape down the bowl and repeat.
Halve the mixture.
Take one half and roll into long sausage/log approximately 2 - 2.5 cm wide.
Slice 3 cm logs and then roll each one in the desiccated coconut.
Repeat steps 3 and 4 with the second half of the mixture.
Place the coated logs in an air tight container and put in the refrigerator for a minimum of 30 minutes to firm up before eating.
No Medjool dates - you can replace with 220 gm smaller Iranian dates.
No almond butter - replace with any other nut butter.
Avoiding nuts - replace almond butter with sunbutter.
Note: The recipe is written for the Thermomix, but you can easily convert it to mixing in a food processor or in a bowl.
