Tartare Sauce

One of my favourite sauces to make (and enjoy) is a tasty, tangy, tartare sauce. Here's my recipe that's so simple and easy to make, but packs a lot of flavour.

Tartare Sauce (makes approx. 250ml)

Ingredients

  • 1 pickled gherkin (pickle), halved

  • 1 shallot, halved

  • 15 g of capers, drained

  • 1 batch of mayonnaise

  • 3-4 Tbsp lemon juice

  • 1 Tbsp fresh or 1 tsp dried tarragon or dill

  • 1 Tbsp fresh or 1 tsp dried parsley

Method

  1. If using fresh herbs, add them to the Thermomix (TM) bowl and chop for 3 seconds/speed 8. Set aside in a small bowl.

  2. Add the pickled gherkin, shallot, and capers to the bowl and chop for 3 seconds/ speed 5. Scrape down the sides and repeat if any large pieces left.

  3. Add the mayonnaise, lemon juice and herbs and stir together for 30 seconds/speed 2-3/reverse.

  4. Scrape into jar and store in the refrigerator. It's best refrigerated for 30 minutes before use, as the sauce firms up slightly. Use as needed. Enjoy!

*Don't have a Thermomix? No worries, you can use a high powered food processor or hand-held stick mixer.
